National Egg Day Omelette Week! Scotch Egg

Hi everyone! Welcome back to Omelette Week! Today we have a Scotch Egg Omelette. The perfect combination of sausage, bread crumbs, and a spicy sauce really make the egg shine.  I can't wait to dig in, so let's get started!

Ingredients!

For the Omelette

  • Standard Omelette Recipe (found here!)
  • Half a Package of Browned Sausage
  • 1/4 cup of Bread Crumbs

For the Sauce

  • 2 Tablespoons of Mayonnaise
  • 2 Tablespoons of Sour Cream
  • 1 Tablespoon of Maple Syrup
  • 1 Tablespoon of Spicy Mustard
  • 1 Tablespoon of Sriracha (optional)
  • Garlic to taste

Directions!

Brown sausage in a pan. Strain out sausage from grease, leaving grease in pan.  Place sausage in a separate bowl.

Toast bread crumbs in a pan with sausage grease.  Place in bowl and set aside.  While bread crumbs are toasting, mix mayo, sour cream, syrup, mustard, and sriracha in a small bowl.

Cook egg mixture in a pan until egg white have a slight jiggle.

Add sausage to the center of the omelette. Steam until eggs no longer jiggle.

Sprinkle with bread crumbs and drizzle sauce then enjoy!
